Picked prior to ripening, these have a lightly floral flavor that opens up and becomes herbacious. They will quickly pick up the flavor of any other pepper they are blended with. For that reason they are best used alone.
Green peppercorns are picked before they are ripe and then brined to prevent them from blackening. That doesn't diminish their heat or flavor, it just makes them a bit different, even more subtle.
The heat from these is gentle and builds slowly, but don't take them for granted. They give you a satisyingly pepper finish.
